    The vessel behind the food

    Every Malabar recipe we make started in a vessel like this one. Before steel, before non-stick, bronze was what the kitchen was built around: a heavy, wide, shallow uruli that you cooked the wedding biryani in, then the everyday fish curry, then your daughter's first payasam.

    This one is made the old way, in Kerala, by hand. The bronze is beaten out over a fire until the walls are even and the base is thick, then finished on a lathe, which is where the ringed grooves under the rim come from. Turn it over, and you can read how it was made: the radiating marks of the beating, the raised boss at the centre where it sat on the lathe, and four cone feet cast on so the vessel stands clear of whatever is under it.

    What it does to the food

    Bronze holds heat the way steel never has. It warms slowly, spreads evenly across that thick base, and then holds temperature long after the flame is low, which is exactly what slow Malabar cooking wants. Biryani finishes on gentle heat without a burnt bottom layer. Curries reduce into the masala instead of boiling away. Payasam thickens without scorching at the edges. You will use less oil than you expect, and you will notice it.

    There is nothing here to wear out. No coating to flake, no rivet to loosen, no handle to work loose. Bronze only gets better handled it darkens, then settles into a deep warm gold, and a rub of tamarind and salt brings it back whenever you want it bright. Look after it properly and this is the vessel your children argue over.
